Meet our Chef. Justin Bittner.

Chef Justin Bittner’s passion for authentic cooking find its roots in the farm—literally. He spent childhood summers working on a family farm in Pennsylvania, and it was there that he first developed his deep respect for the craftsmanship and earthly knowledge of farmers. An eager apprentice, he absorbed volumes on properly working with ingredients and delivering products with care and love from the farm to the table.

With a respect for nurturing, Justin pursued a culinary career at the Pennsylvania Institute of Culinary Arts, where he worked at the Pine Grill in Somerset, PA. Shortly after graduation, Justin accepted an assignment at Tio Pepe’s in Baltimore, MD, known for their authentic Spanish cuisine and exacting craft standards—the perfect opportunity for Justin to forge his tireless work ethic and down to earth demeanor.

Justin then moved to the Elkridge Furnace Inn in Maryland where he worked under Chef Daniel Wecker. There he was able to grow and develop menus with Chef Wecker, further deepening his affinity for fresh ingredients sourced at local markets. His desire to showcase the work of area farmers blossomed into full reality when was named Executive Chef at Bar Pilar in Washington, DC. During Justin’s six years as Chef, he cultivated relationships with nearby farms by using their produce, meat and seafood in his small plate menu dishes, earning him recognition in Washingtonian magazine multiple times. He also successfully led a large renovation project at Bar Pilar, redesigning the kitchen and providing the vision for the upstairs addition to the restaurant. In 2012, Justin was invited to cook at the James Beard House, and the Restaurant Association of Metropolitan Washington nominated him for Rising Culinary Star of the Year.

At 8407 Kitchen Bar, Justin brings you his farm-to-table expertise and his passion for perfecting small plate offerings. His approach to American artisanal cuisine is imbued with classic influences from the French countryside.

When he’s not in the kitchen, you can find Justin on his own small farm in Laurel, MD, where he takes pride in raising his flock of chickens, training his German Shorthaired Pointer, and playing banjo with his family. He is also an avid hunter who enjoys hunting trips with local purveyors and farmers.
